A critical process in fabrication of set yoghurt is the incubation quality which is guarantied through heat distribution and product conformity.

Classic solutions are not guarantied if the air temperature is not homogeneous throughout the incubation room. Development of  pH  level can vary throughout the entire pallet if temperatures are not set properly.
